Ukdiche Modak ( Steamed Modak )

So it is Ganesh Chaturthi and the one thing I miss when I am away from home are Ukdiche Modak or steamed rice modaks.

For the dough

1. Rice flour - 1 cup
2. Salt - to taste
3.Ghee - 1 Teaspoon
4. Water- 1 and 1/2 cups of water

Boil 2 cups water in a pan. Add Ghee and Salt. Add the rice flour. Make a nice dough and cover it with a lid. The dough should be warm when you make the modaks or they would crack.





For the filling

1. One grated coconut
2. Jaggery - 1 cup
3. Nutmeg powder - 1/4 teaspoon
4. Elaichi or cardamom - 2 nos  crushed into powder



Take a pan. Cook the coconut and jaggery well. add the nutmeg powder and elaichi powder.

Leave to cool.

Now take the warm dough. Grease your palm with a little ghee. Make a flat round disc with the dough.
Fill a little filling. Close the ends to make modak shape. ( I am not that great with making them, so I prefer making round balls)

Steam in a steamer for 10 to 12 minutes.

Eggless Vanilla Cake

Ingredients 2 cups Maida 1 cup white butter 1/2 tin condensed milk 1/2 cup sugar  2 tbsp milk powder dissolved in half cup of water 2 teaspoons baking powder 1/2 teaspoon edible soda 1 teaspoon Vanilla essence Enough aerated soda to correct the conaistency about 1/2 cup 1 pinch salt Butter paper \white paper to line your baking tin Method 1. Sift the maida,baking powder, salt and soda together three times in a sieve and keep it aside. 2. Whisk butter to a nice fluffy consistency. 3. Add both sugars and condensed milk to the white butter and whisk it all together with a hand whisk. 4. Slowly add the flour ( maida ) mixture . Fold it together. 5. Add soda slowly to the mixture to get the ribbon consistency. You might need to add lesser than the prescribed amount above. 6. Fold all the contents with a soft hand. 7. Mota Papad

  Ingredients Urad dal fine powder - 500 gms Papad khaar / soda - 1/2 level tsp Black cardamom seeds Jeera - 1 tbsp Pepper corns coarsely ground  - 1 tbsp Salt to taste Water to knead the dough Method 1. Take all ingredients in a bowl and make a tough dough using very little water 2. Keep aside this dough for two hours. 3.  Use a khalbatta or hammer and bash the dough until it is soft and pliable. 4. Make a thick papad and keep in sunlight for one day. 5. Cut the papad into small pieces and sun dry for 3 to 4 days and store in a container. Use this papad to make Papad ki sabji  Note - the soda should not be more, the dough should be tough and dry the first papad only for one day so you can cut them into pieces.
