Lemon Squash



Ingredients

Juice of 15 lemons. Should be around 1 glass full.
Don't squeeze the lemons to hard or the juice will turn bitter.
3 glasses of sugar
A few drops of lemon essence.
A few drops of color ( totally optional)

Method

1.  This Squash  requires double boiling. Place a large pan on top of another pot with boiling water.
2. Add lemon juice and sugar to the pan.
3. It takes 10 minutes for the sugar to melt.
4. Once the sugar melts add essence and color and pour into a dry glass bottle. Cover when cool.
5. Don't keep it on fire \ cook for too long or the sugar will solidify.

This squash has no preservatives and lasts for a year.

* For grape squash add 1 glass of sugar and 1 glass of grape juice. Use Tonovin instead of essence.


* For Pineapple squash 1 glass of pineapple juice, 1 glass of sugar and 1 tspn pineapple essence. Add half a lemon juice.

* Make orange juice same as pineapple


You can use the lemon squash to make your favourite mojito too! Use your favorite lemon drink or soda instead of water.

  Ingredients Urad dal fine powder - 500 gms Papad khaar / soda - 1/2 level tsp Black cardamom seeds Jeera - 1 tbsp Pepper corns coarsely ground  - 1 tbsp Salt to taste Water to knead the dough Method 1. Marathi Chavlichi Aamti ( Black eyed beans)

Ingredients 1 cup small chavli beans ( small black eyed beans are tastier) Salt to taste 1/2 tsp turmeric 1 tbsp kala masala 1 chopped onion 2 tbsp oil for cooking Coriander leaves for garnish 1/2 tsp dhania powder For masala paste 5 slices of copra 10 cloves of garlic 1 tsp jeera 1 tsp oil Method 1. Wash the black eyed beans and keep aside. 2. Take 1 tsp oil, add jeera, lasun and copra pieces 3. Fry for two minutes till slightly brown 4. Grind in a mixer grinder. 5. Heat oil and add fry the onions 6. Add turmeric and kaala masala 7. Add dhania powder 8, Add the copra masala. 9. Mix the chavli beans with this masala. 10. Add salt 11. Add three times the water and cook in a pressure cook for 4 whistles. 12. Enjoy it with rice.

Appe and Coconut Chutney - Hema's Recipe

Ingredients 1 Cup Urad dal 1 Cup Roasted Semolina ( jaada \ coarse Sooji) 1 inch Ginger finely chopped 4 green chillies Chopped A piece of fresh coconut chopped Handful of Coriander leaves finely chopped 7 to 8 Curry Leaves chopped Salt to Taste Oil to Grease Method Soak Urad Dal for two hours. Grind with a little water to smooth paste and leave overnight to ferment. Roast Semolina in a dry pan and cool the evening before. Next day morning: Mix all the ingredients ( dal + sooji + green chillies+ ginger+ coriander leaves + Coconut. Add salt to taste Grease Appe Patram with a brush. Heat and add one tspn of batter and let it cook. Turn the appe upside down and sprinkle some more oil to cook. Serve hot with Coconut Chutney.
