Chole Bhature


Ingredients for Chole

250 gms Chick peas soaked overnight
Salt to Taste

For the Potli

1 sachet of tea leaves
5 - 6 cloves
10 pepper corns
2 badi elaichi
2 small elaichi
1 inch piece of cinnamon.

Make a potli of all these ingredients or place it in a tea infuser.


Method

Boil soaked peas with double the water. 500 ml approx.
Add the masala potli and salt
Cook in a pressure cooker till Chole are cooked.


For Masala

250 gms Onions
125 gms tomatoes
2  inch ginger paste
50 gms Anardana
3 tsp Jeera
1tsp red chilli powder
1 tsp dhania powder
Everest Chole masala about 25 gms ( 2 tbsp)
Oil for chaunk
1tbsp Ghee


Method

1. Roast anardana and 2 tsp jeera on a tava. Grind and sieve this masala and keep aside.
2. In a big kadhai add oil, 1 tsp jeera, onion, ginger and saute till golden brown.
3. Add haldi, dhania, mirchi, chole and cook for a few minutes.
4. Add tomato puree and cool till it leaves oil.
5. Remove the potli from chole and strain the chole. Keep the water aside.
6. Tip in the chole to the mixture, add salt and add the boiled chole water
7. Boil for 15 minutes and add 1 tbsp ghee just before serving.

For Bhature

250 gms Maida
1 cup dahi \ curd for dough
1 tsp Baking powder
1/2 tsp sugar powder
1 tbsp oil
salt to taste
1tbsp rawa
Oil for frying

Method

1. Knead a nice dough using all the ingredients with only dahi. Do not add any water.
2. The consistency should be like that of a chapati dough.
3.  Brush it with oil and keep it overnight.
4. Roll out nice bhature and fry it in hot oil.

Serve with chole!

Patande - Himachali Pancakes

Ingredients 1 cup aata ( whole wheat flour) 2 cups milk 1 tsp condensed milk 1 tbsp cream or malai 1 pinch baking soda 1 pinch baking powder 1/4th tsp cinnamon powder 1/2 tsp saunf 1/2 cup sugar or to taste. Amul butter to shallow fry the pancakes Method 1. Take a mixing bowl. Add milk, cream, condensed milk, sugar and whisk well. 2. Add flour, baking soda and powder. 3. Mix well. Adjust consistency with water if the batter is thick. The consistency should be that of a pancake \ dosa batter. 4. Take a nonstick pan or a pancake pan. Add amul butter and shallow fry the pancakes. 5. Eat them with caramelized apples, plums, cherries, any seasonal fruit.

Mota Papad

  Ingredients Urad dal fine powder - 500 gms Papad khaar / soda - 1/2 level tsp Black cardamom seeds Jeera - 1 tbsp Pepper corns coarsely ground  - 1 tbsp Salt to taste Water to knead the dough Method 1. Take all ingredients in a bowl and make a tough dough using very little water 2. Keep aside this dough for two hours. 3.  Use a khalbatta or hammer and bash the dough until it is soft and pliable. 4. Make a thick papad and keep in sunlight for one day. 5. Cut the papad into small pieces and sun dry for 3 to 4 days and store in a container. Use this papad to make Papad ki sabji  Note - the soda should not be more, the dough should be tough and dry the first papad only for one day so you can cut them into pieces.
